About Organic Garlic

Garlic is widely used around the world for its pungent flavor as a seasoning or condiment. It is a fundamental component in many or most dishes of various regions, including eastern Asia, south Asia, Southeast Asia, the Middle East, northern Africa, southern Europe, and parts of South and Central America. The flavor varies in intensity and aroma with the different cooking methods. It is often paired with onion, tomato, or ginger. The parchment-like skin is much like the skin of an onion and is typically removed before using in raw or cooked form. An alternative is to cut the top off the bulb, coat the cloves by dribbling olive oil (or other oil-based seasoning) over them, and roast them in an oven.

Importance of Fresh Garlic

All our Farm Fresh garlic is grown on our 8 acre urban farm in Turkey using regenerative practices (no chemical fertilizers, pesticides, or herbicides).

Garlic is very low in saturated fat, cholesterol and sodium. It is also a good source of Calcium, Phosphorus and Selenium, and a very good source of Vitamin C, Vitamin B6 and Manganese. It also contains powerful antioxidant phytonutrients.

There are two sub-groups of Allium sativum: hardneck garlic (subspecies ophioscorodon) and softneck garlic (subspecies sativum).

Hardnecks form an edible flower stalk, or scape, in the springtime. Softnecks do not. Within each sub-group, there are several types of garlic. Four types have grown well consistently for us in Turkey and the UK: Porcelain, Purple Stripe, Artichoke and Silverskin. Each of these types has several varieties, or strains.

HARDNECK GARLIC

A) – Porcelain Type

* Storage life: about 6 months from harvest
* 4 to 7 cloves per bulb
* Satiny white bulb wrappers
* Largest cloves of any other garlic type
* Mostly robust & strong flavor profiles
* Easier to peel than most other types
* Forms edible scapes in spring roughly 3-4 weeks before harvest
* Highest allicin content among garlic types

Porcelain Type

The Porcelain varieties we are growing this year are:

-GERMAN EXTRA HARDY: – Super robust flavor with an aftertaste that sticks around.
-MAJESTIC: – Strong, long-lasting garlicky flavor.
-MONTANA ZEMO: – Strong yet pleasant when raw; rich and nutty when cooked.
-MUSIC: – Somewhat hot when raw; starchy & sweet when roasted.

B) – Purple Stripe Types

* Storage Life: about 4 months from harvest
* 4 to 12 cloves per bulb
* Gorgeous with purple streaking and blotching on both the clove skins and bulb wrappers
* Along with Standard Purple Stripe, there are two subgroups of this category: Glazed Purple Stripe and Marbled Purple Stripe
* Easier to peel than Artichoke and Silverskin types
* Forms edible scapes in spring roughly 3-4 weeks before harvest
* These types are especially well suited to roasting

The Purple Stripe variety we are growing this year is:

– CHESNOK RED: – Considered the best variety for roasting with its ultra sweet flavor and creamy texture. Perennially a best-seller.

– ELEPHANT GARLIC: – Actually a member of the leek family with similar mild flavor. Forms giant scapes in the spring. Mega-sized cloves. Try it in everyday cooking!

GARLIC SCAPES: –  Garlic scapes are the edible flower stalks that form on hardneck varieties of garlic in mid to late spring, approximately 2 to 3 weeks before bulbs are ready to harvest. They’re removed from the plant to ensure a larger, more nutrient dense bulb can develop.  Scapes are a delicious bonus crop in their own right. They have a mellow garlicky flavor and can be used in recipes just like the clove – just chop them up and add to meals!

SOFTNECK GARLIC

C) – Artichoke Type

* Storage Life: about 8 months from harvest
* 10 to 20 cloves per bulb
* Cloves vary in size and form in layers, making the formation of this garlic similar in shape to an artichoke
* This type boasts wide ranging flavor profiles between varieties, from very light and mild to robust, rich, and zingy
* Clove wrappers are tightly adhered, making them more difficult to peel than Porcelains and Purple Stripes (but they’re longer storing)

The Artichoke varieties we are growing this year are:

  •  CALIFORNIA EARLY: – One of our staple garlic varieties. Semi-rich, fairly light flavor is suitable for a variety of uses – roasted, everyday cooking, even raw. Originally from Gilroy, California and has grown consistently well for us in our Turkish climate.
  • EARLY RED ITALIAN: – A little pungent with semi-robust flavor and a light bite. Earlier to harvest than many garlic strains.
  •  INCHELIUM RED: – Mild yet flavorful and is a top-rated softneck for taste. A consistent best-seller
  • ISLAND STAR: – Richly flavored with just a touch of sweetness.
  • MADRID: – Very mild flavor with the slightest touch of heat. Originally from Spain as the name suggests.
  • SUSANVILLE: – Well-rounded yet mellow flavor. Originally from northern California.
  • TRANSYLVANIAN: – It boasts a spicy, sharp bite. Originally from Romania.

D) – Silverskin Type

* Storage Life: about 10 months from harvest
* 12 to 20 cloves per bulb
* Creamy white bulbs offer an abundance of cloves, varying greatly in size
* Flavors range from mild and warm to quite strong and zingy
* The longest storing type of garlic and the last to be harvested

Silverskin Type

The Silverskin varieties we are growing this year are:

-IDAHO SILVER: – Zingy and hot when used raw, but the flavor mellows considerably when cooked or roasted. -MILD FRENCH: – Bold, rich flavor and moderately pungent. A creamy white bulb with gorgeously contrasting caramel colored clove wrappers.

– NOOTKA ROSE: – Strong, garlicky flavor. Rosy hued clove wrappers contrast beautifully with the milky white outer bulb wrappers. An heirloom variety originally from Washington. The longest storing garlic we grow and an annual best seller.
-SILVER WHITE: – Mild, well-rounded flavor that makes this one a lovely all-purpose garlic.
